Almond Shelf Life
With proper handling, natural almonds may be stored for upto two years. Blanched almonds may be stored for up to one year. Shelf life increases with refrigeration. Factors influencing shelf life are oxygen, product age, roasting, size of pieces, moisture content, exposure to light and certain metals, processing methods and packaging. Storage conditions are extremely important in optimizing potential shelf life and in guarding against infestation. Since almonds readily absorb odors, they should never be stored near or exposed to pungent foods or chemicals.
Optimum storage conditions
- Moisture content < 6%
- Temperature 45 to 52 F (7 to 11C)
- Relative humidity (cold storage): 55% to 65%
